Windy start to the new year. Walked outside after lunch (Denny’s, which was chaos; I tipped our poor waitress very well). Walk went well, had one spot where a gust threatened my balance, but kept my feet okay and kept going. Slightly longer walk today since it was the last “warm” day for the near future (47F/8C) as a cold front brings possible snow this upcoming weekend.
In a very rare showing we were at the comic shop before they opened at 11, and were not the first to get there. I grabbed a dessert drink from the Starbucks down the shopping row while we waited (sugar cookie latte, with sprinkles).
Now the husband is making homemade hotdog buns in a new pan I got him for Xmas. Yes, it’s easier to buy them at the store, but this seemed like something fun for him to try. From the cursing I’m hearing from the general direction of the kitchen it might not be as fun as intended, but I’m guessing they’ll still come out tastier than store brand, just from the ingredient list.

We went out for the last haircuts of the year this morning, then hit the mother ship of our local comic store for stocking stuffers. On the way there the road was blocked so we decided to hit a Barnes & Noble and let the blockage situation work itself out. We were forcibly reminded of why we don’t hit physical stores the weekend before Xmas. It actually wasn’t that bad, and I’m glad they were busy as I hope that helps keep them afloat, but it reminds me of how devout church goers must feel when the CEOs (Christmas-Easter-Onlys) show up at the holidays. It also reminded me of working at a mall in graduate school, when they made us park off-site and shuttled us over, which I was initially annoyed at, but then grateful for when we could get out of the satellite parking a lot faster, even with the bus, than one could leave the garage.
Stocking stuff picked up. Finished the brim on an elf hat for the husband and started on the body. The green yarn pull ball for the body is behaving a lot better than the brim; the white brim yarn kept catching and was just a nightmare to pull out until I finally managed to pull the bit that was catching out of the middle and undo it.
The in-laws arrive tomorrow afternoon, so the husband was baking up a storm. Ginger cupcakes with gingerbread men and vanilla frosting. Sandwich cookies (chocolate with vanilla frosting inside). And I think he has more planed, but that’s all that got done over the last two days. Good stuff, but I’m finding that I have less of an appetite for a ton of sweets. I’m trying to steer him toward snacking size cakes when it’s just us (aka a single layer in an 8×8 pan) so we don’t have, say, an entire 9″ two-layer cake with frosting staring us down.

Back in January I started tweaking a biscuit recipe for my particular dietary needs (gluten and dairy free), and as of last night’s batch I think I have dialed it in. Cast iron skillet, 8″, and cut the recipe in half with some tweaks, including letting the dough rest for 30 minutes which allows the gluten free dough to rise in a manner more like regular flour and letting it rest for five minutes after baking (thank you for the tips, ATK).
Half-batch gluten and dairy free “Butter” Swim Biscuits
1 cup dairy-free milk (I used unsweetened almond milk)
1 tsp apple cider vinegar
1-1/4 cups gluten free flour (King Arthur, preferably)
3 tsp baking powder
3/4 tsp kosher salt
2 tsp granulated sugar
1/2 stick of margarine (4 Tbsp)
Mix the milk and vinegar and let sit while you assemble the other ingredients (this creates fresh “buttermilk” and gives the acid needed for the baking powder to react).
Combine the flour, baking powder, sugar, and salt in a medium-sized bowl. Add the milk mixture and gently mix all the ingredients together until a moist dough is formed (lumpy is good). Let sit for thirty minutes to allow the dough to incorporate the moist ingredients and get a good rise going.
At the twenty minute mark, preheat your oven to 450 degrees.
At the twenty-five minute mark put the margarine in the 8 Inch cast iron skillet and place in the oven until the margarine is melted, about 2-6 minutes depending on your oven and how cold the margarine was. Remove from the oven.
Pour the dough right on top of the melted margarine and use a spatula to gently spread it evenly across the skillet until it touches the sides. Brush some of the margarine across the entire top of the dough – any bits in the middle without margarine on it will look and taste dry.
Use a knife to cut the unbaked dough (it should be swimming in margarine at this point) into mostly even squares. (It’s fine if they are not perfect squares.)
Bake for 20-25 minutes. Remove from oven and let sit for 5 minutes before serving.

I’m supposed to be working, but mostly I’m cleaning out my home office. I have taken care of a few things, so your (US) tax dollars aren’t a complete waste today, but I really felt the need to change up my home office space, get rid of trash and generally declutter it. And hey, I’ve already found an old gift card that still has a balance on it, so go me.
Xmas was a low-key affair, just the two of us. He made a delightful ‘bold and spicy gingerbread cake’, a bundt cake that used three different forms of ginger (dried ground ginger, fresh ground ginger, and ginger ale in the glaze). It turned out really well, and it’s been a nice breakfast most mornings since. I made melting potatoes (potato rounds cooked at high temperatures, and flipped twice to get them browned on both sides), and some other odds and ends. We both made out like bandits from each other, and had some interesting choices from our families (bags of rubber duckies, anyone?).
Most of the gifts have now been moved away from the tree and to their current homes in the house, which is also part of what’s instigating the home office cleaning. Books needed to be rearranged to make room for more.
I finished 99% of the endless scarf I’ve been knitting for the husband. Just need to weave in the ends and block the sucker. I’m not normally one to do a lot of blocking, but this one needs it – it has a tendency to roll inward toward the wrong side, and I’d like it to be able to sit flat when he wears it. So given the length I’ll be laying it out on the kitchen island once our house cleaner is done tomorrow. Next up is trying some brioche, specifically this pattern, once I get in some practice with the method, using the yarn I just finished playing with for the endless scarf.

All in all a very good Thanksgiving day. Was nice and quiet for most of it. The store this morning was uncrowded and uncharacteristically quick to get out of. The cooking went well, and I took the better of the two batches of cupcakes with me (made 2 dozen). Unfortunately I’ve broken a ring on my icing piper, so it was slathered on by spreader rather than piped nicely, but they did fine.
Side note: I really, really want to make the margarita cupcakes I found in the cookbook while flipping back to the buttercreme frosting recipe.
The dinner itself was fantastic. I took a zucchini risotto as well as the cupcakes (the mushroom selection stunk, so zucchini it was). The bird came out perfect, which the host was rightly proud of. He also thoughtfully saved me a batch of potatoes sans butter/milk, which was much appreciated. The other selections were equally tasty, with lots of good vegetables.
Some Wii was played, and I set Jon’s Wii up (he hadn’t played with it since he’d moved – in June). Next thing you know he’s going to be getting messages via the Wii from a certain someone who will have him registered here shortly. Bwhahahaha. We did warn him what the blinky blue light on the front means now, too.
Got the kitchen cleaned up just now after getting home, so no mess in the morning. Off work early tomorrow, and will plan to stop by the gym after that, swim, and hand in my receipt for the new shoes & lock. Wonder how they’ll do the credit.
Got the news that early registration for the Nation’s Tri opened for DC Tri Club folks, so signed up for that tonight. Hopefully with the stretching I’ve started doing on my feet will keep the PF under control, and keep it from recurring, and I’ll be able to do the race this time around.

The cupcakes went over well last night. ‘Twas a fun evening, and I enjoyed getting to see the various folks who were there.
Waiting for coffee to finish steeping here in the french press this morning, then I’m getting cleaned up and heading out to brunch at Asylum with Stephen and Kevin. I’ve found ’tis better to get to Asylum right at 11 when they open because they’ll actually have the daily specials available (and they’re generally worth it), and you can find seating with a minimum of fuss. 2 pm? Good luck. Haven’t been in a couple of months, so am looking forward to the good food. And time on the Metro to knit, of course. Then I’m going to be stuck reviewing a document for work for a bit, and hoping I don’t get the same reaction I got last year when I pointed out typos in it (“Wait, you can’t change the text now!” Then why have me review it, you wankers? Honestly).
Have my annual physical tomorrow, as well as a dermatologist visit to get checked out. Don’t expect anything earth shattering will be found, but given the family history it’s better to check than not. The worst part is the fasting for the blood tests. No, wait, I take that back, the worst part is the prostate exam, but the fasting comes in a close second. But we do what we must.
Picking JT up from the airport this evening on his way back from London and grabbing dinner with him. Sunday dinners with him seems to be becoming a regular habit, and it’s one I’m glad we’re getting into. He’s one of my longest known friends in the area, and I enjoy the extra time with him now.
